Sunday Brunch: Yummy Eggless Scramble

As I said in this past week's Hump Day Afternoon Delight, I really want to bring some of Miranda Crane's recipes from the somewhat dormant Livejournal Community arty_chokes back to life.  Here is another recipe from arty_chokes, Miranda's delicious tofu scramble.  Whether you are looking for a delicious Sunday Brunch recipe or a recipe for any time, this one is a sure bet.  Don't forget to pay a visit Miranda's Flickr, where she posts gorgeous pictures of her delicious meals complete with the recipes.

So without further delay I present to you:

Miranda Crane's Best Tofu Scramble Ever
1 block of med tofu
1 med onion
1/2-1 red pepper
3 cloves of garlic
6-8 large mushrooms
1 t tumeric
1/2 t dill
1 t dried parsley
2-3 T braggs

chop onion, red pepper, mushrooms
put in pan with braggs until onions are soft and most liquid is cooked away.
squeeze out extra liquid from tofu and crumble into pan

stir in with other ingredients

press the tofu down with the spatula to squeeze out more moisture
add spices

continue cooking until consistency resembles scrambled eggs.
