Sunday Brunch: Fresh and Healthy Blueberry Pancakes

By now you all know of my goal to bring some of Miranda Crane's recipes from the somewhat dormant Livejournal Community arty_chokes back to life.  Here is another recipe from arty_chokes, Miranda's fresh and healthy blueberry pancakes.  Whether you are looking for a delicious Sunday Brunch recipe or a recipe for any time, this one is a sure bet.  Don't forget to pay a visit Miranda's Flickr, where she posts gorgeous pictures of her delicious meals complete with the recipes.

So without further delay I present to you:

Miranda Crane's Fresh and Healthy Blueberry Pancakes


Ingredients:
1 cup whole wheat flour
1/2 cup ground flax seed
1/2 cup wheat germ
3 T raw sugar
2 t baking soda
2 t baking powder
1/4 t salt
1/2 t cinnamon
2 eggs
1 T oil
1 lemon
1 3/4 cup soy milk
1 t vanilla
1 cup ish of frozen or fresh blueberries thawed



sift together dry ingredients. make a dent in the middle of the bowl.
in a liquid measure beat together eggs, oil, vanilla, soy milk and juice from 2 lemons.
combine wet + dry ingredients
mix until combined (do not over-mix)
heat a pan with a little oil or PAM (enough to coat pan)
(edit: pam makes it much harder to keep it from not burning so use a bit of oil)
ladle about 1/4 cup of mix on pan. 
place blueberries on top
when the surface starts to bubble it's probably time to flip it.

  18. You could always take it one step further and substitute raw sugar for natural, zero-calorie stevia sweetener. Stevia (stevia rebaudiana) is a plant in the Chrysanthemum family, native to Brazil and Paraguay, which is traditionally used as a sweetener, herb, and remedy. Stevia extract has been used commercially as a sweetener in Asia for 30 years and is available in Canada as an ingredient in Natural Health Products. Rebaudioside A (common name Reb-A) is a natural sweetener extracted from the Stevia plant. Reb-A tastes 200-300 times sweeter than sugar and is non-nutritive, so only a small amount is required.

  19. Thanks for the advice, Jessica! We actually use Stevia 99% of the time around here. Our favorite beverage is a blend of lemon juice, water, and pure stevia. If you guys start making Pepsi with stevia, you'll have a customer right here ;)
