Aias's favorite kind of soup is Chicken Udon from Sushi places. Here's how to make it at home.
- Soup Base (any flavour will do, we used chicken)
- Package of udon noodles (you can use ramen, or any noodles really)
- Sliced zucchini
- Sliced carrot
- Enoki mushrooms
- Snap peas
- Bok Choy
- Meat or tofu of your choice
- Cooked crab meat or fish cake (obviously optional)
Obviously this isn't rocket science, you can pretty much add any veggies you want or leave out any that you dislike.
I first fried up the meat, then the zucchini and carrots. Once they were soft, I added the broth, tossed in the mushrooms, noodles, snap peas, and bok choy. When it was all cooked (it takes probably 5 minutes), I took it off the heat and tossed in the cooked crab meat.
